We all love tasty food and what makes it even better is when it is classed as healthy. I enjoy cooking and baking and try to do these from scratch, the traditional home-cooking way. One of the easiest and quickest mouth-watering dishes to cook is Okra (Gumbo or Bhindi).

First let’s look at the green pod-like vegetable called Okra, also known as “lady’s fingers”. This superfood full of antioxidants can help lower cholesterol, beat stress and fatigue, balance hormones, and even help manage blood sugar in cases of type 1, type 2, and gestational diabetes. It is a good source of vitamin A, C, D, B-6, and other B vitamins, iron, potassium, magnesium and calcium. Okra is high in dietary fibre.  It is quite popular in Middle Eastern, Creole, African, Turkish, Indian, Caribbean, and South American cuisines. Okra is low in calories and favoured by the healthy conscious eater. There are so many different recipes for this delicious vegetable. With so many tasty ways to prepare it, why not give this Pescatarian recipe a try!  You can easily adopt and change to your own preference by adding meat or chicken or by totally leaving out the sea food
